When out on the West Coast, on a peninsula surrounded by ocean, how could one not take in the local seafare! Our mission, infiltrate the dealer, find the supplier, of mussels that is. After searching around Tofino, we finally found some decently priced mussels at a seafood shop, although it wasn’t straight from the fisherman’s boat, it would have to do. The Westy fridge stocked with a recent trip to the Tofino Brewing Company, we made haste to our beach front campsite.
Step 1: Chop an onion, celery stick and some garlic cloves. And drink half a beer.
Step 2: Rinse the mussels.
Step 3: Dump the remaining beer, about one cup, and the veggies into a pot and bring to a boil on the Westy stove.
Step 4: Add mussels to the pot, cover and let steam until mussels open.
Step 5: Melt butter, dip and enjoy.
